Easy Summer Pasta Salad
One of our favorite easy weeknight dinners in the summer is this super simple pasta salad (sans mayo - which is the devil’s sauce) — this recipe has evolved over the years and is a total crowd favorite. The girls and I made this last week and packed it up for Baylor’s baseball game. It’s the perfect weeknight dish, easy to bring to a picnic or potluck and makes for amazing leftovers! Here we go…
1 LB cooked bowtie pasta (cooled & tossed with olive oil!)
Sliced cucumbers, yellow and orange peppers and cherry tomatoes
Rotisserie Chicken
Shredded parmesan cheese
Toss with Asiago Caesar + Creamy Balsamic Salad dressing (I do 1 part caesar to 3 parts balsamic) - Brianna’s is our fav!
Top with crunchy croutons, more cheese and avocados if you fancy!
