Homemade Marshmallows
My sweet aunt came over last week and spent a few hours with us and passed on her delicious marshmallow recipe that will definitely become a regular around here. Baylor had one sticky finger and he was running for the hills, while the girls basically bathed in the marshmallow stickies.
HOMEMADE MARSHMALLOWS:
2 1/2 TBSP GELATIN
1/2 CUP WATER
1/2 CUP WATER
1/3 CUP CORN SYRUP
2 CUPS SUGAR
1/4 TSP SALT
2 TSP VANILLA
1/2 CUP CORNSTARCH
1/2 CUP POWDERED SUGAR
- Combine Gelatin & 1/2 Cup Water and let sit together for 15 minutes
- Combine water, corn syrup, sugar and salt in a pot and bring to a boil. Cook to 240°
- Mix hot liquid with gelatin mixture and stir for 10-12 minutes (don't let it burn!)
- Add Vanilla
- Line pan with non-stick foil or spray with non-stick spray
- Pour mixture and let settle at room temperature (3-4 hours)
- Once settled, cut into squares and roll into cornstarch & powdered sugar mixture
Drop in a cup of cocoa, eat alone while the kids nap, or package up & give to your favorite people!
AND... add a drop of food coloring for a festive treat!! We're going to make green ones for St. Patty's Day!
